“Never underestimate how much assistance, how much satisfaction, how much comfort, how much soul and transcendence there might be in a well-made taco and cold bottle of beer.” - American novelist Tom Robbins.
What I love most about the iconic, savory, Mexican staple called a “taco” is how it has permeated so many cultures, so many kitchens, and so many cookbooks. The taco has evolved from the most basic of Mexican dishes to a never-ending concoction of gourmet cuisine… and let’s be honest, who doesn’t like tacos?
It’s no small feat that beer has become the most popular fermented drink in the United States. Craft beer and craft beer lovers have helped propel the beer industry to levels of unprecedented success. I love that craft beer is an intersection of art, science, and culture brewed together to create a beverage that provokes pure pleasure.
Whether intentional or not, Robbins described the perfect pairing. Independently they are intensely satisfying, but when paired, they ascend to the pinnacle of sensory bliss.
Tacos and Cold Ones is a collection of gourmet tacos and craft beer pairings from around the world, published on the best day of the week, Taco Tuesday. We hope you enjoy!
Cheers!
